The farm tour visits one of the island's most established family operations, where grafted Carabao mango trees (some decades old, with trunks covered in moss and epiphytes) stand in orderly rows across rolling hillsides. The guide explains the grafting technique that allows trees to fruit within two to three years rather than the usual seven, the bagging of individual fruits to protect them from flies and fungus without chemicals, and the precise moment of harvest that determines whether a mango reaches its maximum sugar potential. The tasting at the end of the walk — fresh-cut Carabao mangoes served with slices of dry salted fish, the traditional Ilonggo pairing — is one of those fruit experiences that recalibrates what you thought fruit could taste like.
The afternoon turns to the sea. Guimaras's coastline is studded with secluded coves, white sand beaches, and offshore islets that see only a fraction of the tourist traffic that hits Boracay or Palawan. The bangka island-hopping circuit covers three to four stops, typically including a snorkelling site where the coral is largely undisturbed, a sandbar that appears and disappears with the tide, and a secluded beach with shade trees for lunch. The return ferry from Jordan port to Iloilo at late afternoon delivers a sunset view across the strait with the city's skyline silhouetted against the western sky.
